Winter Cornbread

It’s that time of year; cold weather, busy schedules, holiday prepping and unexpected company. Here is the Cornbread to go along with the scrumptious Winter Warm-up Chilli. ~ recipe inspired by godairyfree.org

INGREDIENTS

  • 1.5 cups yellow cornmeal
  • 1.5 cups gluten free Flour ( or Flour alternate  almond/chickpea flour etc)
  • 4 Tbsp. Raw Honey or  1.5 tbsp. Stevia/Erythritol blend
  • .5 Tsp. Baking Soda
  • 1 Tbsp. Baking Powder
  • 1.5 Cups unsweetened almond milk/coconut milk (not cream)
  • 1/3 cup of coconut oil, melted
  • 2 large eggs

DIRECTIONS

  1. Preheat oven to 400 degrees and grease an 8×11 inch or 9×9 inch baking dish.
  2. Place the corn meal, flour, sugar, baking powder, baking soda and salt in a large bowl and whisk to combine.
  3. In a separate bowl, whisk together milk, oil and eggs
  4. Pour the egg mixture over the dry mixture and stir until blended. Pour into baking dish.
  5. Bake until the top is golden brown and a toothpick inserted comes out clean! 25-30 minutes.
